June: Week 2

Finally! Meal plans are back. I have decided that I will post the meal plan for you that I used the previous week so I can give you some points/notes/tips on what I found out as I was using the recipes. Hopefully this will help you.

I haven’t really started the clean eating program that I talked about before because I can barely find the time to cook a decent meal, much less really plan stuff out for a specific diet, in between getting our house together. But I promise, I’ll do it soon and I will keep you all posted on the progress.

This isn’t on the meal plan for this week, but a week or two ago I made these Crockpot Phlly Cheese Steaks. The recipe calls for chicken but I chopped up two top sirloins instead. It was pretty good and I really recommend trying it one day if you are looking for something to set and forget for the day!

Since I didn’t have the marinade for the recipe, I just mixed up some rubbed sage, salt, and pepper, and rubbed it on the steak.

I added some mushrooms and red peppers for some added flavor.

All mixed together and ready to serve on hoagie rolls with provolone (subbed for the mozarella)!

  • If you’re using my grocery list, I only put things on there that *I* need. So be sure to double check it for things that you need. And some stuff has nothing to do with the recipes, just stuff our family needs. Just double check it, ok?
  • Feel free to leave any of your meal ideas or yummy recipes you’ve found in the comments section. Its like high-school, we all just want to copy someone else!

Menu/Meal Plan

Thursday- Pasta with meatsauce and garlic bread

Friday– Herb grilled chicken with broccoli orzo

I couldn’t find orzo in the commissary because everything is in the WRONG place according to where I think it should go, so I used rice pilaf instead. It was still good but I think the orzo with the pasta water reserved would have been better because our “cream sauce” didn’t come out as well as it could have.

Saturday– Out to dinner with Gramps

Sunday- Easy Mandarin chicken with rice and edamame

Monday- Guacamole grilled cheese with tomato soup

I used the Foreman Grill to make these grilled cheese. I also added BBQ chicken breasts to give it an extra kick and some more protein. 

Tuesday- BBQ bacon burgers with fries and veggies

Bacon INSIDE the burgers. For serious. Amazing. 

Wednesday- Skinny sour cream chicken enchiladas with rice and corn

I would recommend making you’re own cream of chicken soup if you can. The store-bought products are just not good for you. With that being said, I straight up used a can of Cambell’s. Sue me. 

Thursday- Carbonara
