June: Week 3 and Week 4

Sorry I didn’t get this up last week. Things have been crazy here allllll week with J deciding we HAD to get a new truck and it literally taking days to find the right one at the right dealership. The good news is that between last week and this week, you will have lots of choices for meals while you’re making your own meal plan!

The newest and most expensive addition to our family. 

Below you will find the meal plans for both weeks.  I also kind of doubled up on some of the meals because I didn’t get to them due to change in plans. I promise I will get better at getting these up on time! If you are ever waiting for the meal plan and for some reason I don’t post it, you can always email me at barefootandboots at gmail dot com and I will send you the word document that I would normally post below.

Notes

  • I linked the recipes I found online. Most are on my Pinterest page, so click the button to the right to follow me. If you have questions about any of the recipes, feel free to email me at barefootandboots at gmail dot com.
  • If you’re using my grocery list, I only put things on there that *I* need. So be sure to double check it for things that you need. And some stuff has nothing to do with the recipes, just stuff our family needs. Just double check it, ok?
  • Feel free to leave any of your meal ideas or yummy recipes you’ve found in the comments section. Its like high-school, we all just want to copy someone else!

Menu/Meal Plan: Week 3

Thursday- Skinny sour cream chicken enchiladas with rice and corn- I used greek yogurt instead of sour cream!

Friday– Carobonara- Please email me if you would like this recipe. It is my absolute favorite meal evaaaaaa! Its pasta. With eggs. AND BACON. Seriously. How can you say no to this?!

Saturday– BBQ at Nana and Gramps’– This didn’t actually happen and I can’t remember what we did for dinner that day.

Sunday- Chicken parmesan with garlic bread and peas

Monday- Beef tacos with guacamole, corn, and rice

Tuesday- Lemon angel hair pasta with chicken and spinach–  I didn’t make this until the following week and I’ll be honest- I didn’t really like it. I used heavy cream because I didn’t have half and half so that may have effected it, but I also thought it was too spicy. I may knock it down on the red peppers if I ever do it again. 

Wednesday- Grilled pineapple pork chops with roasted potatoes and broccoli- I made these on the Foreman Grill. Super easy to do if you don’t want to heat up your entire grill! I would cook the pork chops for about 4 minutes and then throw the pineapple on top of them for another minute or so. Super delish!

Thursday- Parmesan baked chicken breast with carrots and mashed potatoes

Menu/Meal Plan: Week 4

Thursday- Lemon angel hair pasta with chicken and spinach- See above!

FridaySavory yogurt chicken with mac n’ cheese and spinach salad with strawberries

SaturdaySlow cooker sticky chicken with rice and peas- I used chicken breasts instead of wings. If you use the chicken boobs, I would cook it on low for 4 hours or high for 2. It ended up kind of dry by the time it was done. 

Sunday- BBQ at Nana and Gramps’

Monday- Super Easy Pad Thai with edamame– With this recipe I didn’t use the cilantro because, well, I don’t like it. So I added extra green onions as well as some chicken. I couldn’t find pad thai noodles so I used soba noodles (in the Asian aisle- they are like ramen noodles). I also excluded the hot sauce because E wouldn’t eat it if it is too spicy. 

Tuesday- Slow cooker shredded balsamic beef with cheesy mashed potatoes and green beans

Wednesday- Coconut chicken with apricot sauce, rice, and mixed vegetables

Thursday- BBQ chicken pizza (tilapia with sweet potato for Evelyn)- I basically put BBQ chicken, red onions, and chopped tomatoes on pizza dough with whatever cheese I have in the house and bake it at 350 for about 10 minutes until the cheese is melted.
